About Biltong

Biltong and "Droë Wors" (dried sausage) have been favourites with South Africans and Zimbabweans (or should we call them Rhodesians?) for close on 400 years now. This mildly spiced and salted, air dried meat, has sustained the People of the South since the early days of the Voortrekkers and has, in more recent years, lent it's name to both the complexion and diet of one of South Africa's most famous sons - the single-handed round the world sailor "Biltong" Bertie Reed.

No Rugby, Cricket, Tennis, Boxing or other match in South Africa - whether it be watched live or on television - is quite complete without a few beers and a good supply of Biltong and Droë Wors. It also makes a great travelling companion as it can last for long periods of time with very little attention, always providing sustenance in the absence of other foods or delicacies.

In the home it can be used in a multitude of ways to compliment other dishes: thinly sliced as a filling for omlettes, sliced or shredded as a filling for pancakes or crepes, in salads, and especially as a shining compliment to a "Pot - au - feu á la Provencale", and of course, the South African farmer's favourite: plenty of shredded Biltong on a slice of freshly baked bread with plenty of butter. We have included a few recipes which you might find interesting.

In the past farmers used a whole beef carcass for Biltong and "Droë Wors" , but today the beef buttock - consisting of the silverside (from which 'ronde' or 'predikantsbiltong' and 'regte' bitong are made), topside and thick flank is nromally used. The finest biltong is the 'garingbiltong' made from the eye muscles running down both sides of the backbone and which are cut whole from a side of beef. The most tender is the 'binnebiltong' or 'ouma se biltong' (grandmother's biltong) which is made from the fillet.

Packaging

In order to keep airmail rates and post office interference to a minimum, packaged weight of Biltong or Droë Wors will not exceed 2Kg. Whether sliced or whole pieces, the meat will be vacuum packed and mailed in a plain brown 'bubble pack' envelope marked "Gift" to the address given on the order form. Due to the nature of the product we send it "small package" rather than "parcel" post to overcome the normal customs declarations, and for this reason we are unable to insure it or give any undertakings in respect of replacement or refunding in the case of loss or confiscation.

Please Note that we will NOT be held responsible in any way whatsoever should an order be confiscated by the Customs Authorities or the Post Office in any of the countries from whence orders originate, or should an order be lost within the postal system of any country, including South Africa.
